Ooey Gooey Chocolate Filled Oatmeal Bars

These decadent treats really are fall in love worthy… literally, this is how I got my husband to fall in love with me. I fed him these Ooey Gooey Chocolate Filled Oatmeal bars and next thing you know, we got married. Okay, maybe that won’t happen to everyone, but it is pretty certain that you will fall in love with these bars.

This is one of those family recipes that has endured for many years and is requested often! It is always a hit and they are gone way too fast (I had to go grab one as I typed this because my mouth was watering… so satisfying). Without further ado….

Ingredients:

Chocolate Filling:

1 14oz can Sweetened Condensed Milk

12 0z Chocolate Chips

3 Tbsp Butter

2 tsp vanilla

Cookie:

1 Cup Butter

2 Cups Sugar

2 Eggs

2 1/2 Cups Flour

1 tsp Salt

1 tsp Baking Soda

3 Cups Oatmeal

Instructions:

Preheat oven to 350 degrees. In a double boiler melt the sweetened condensed milk, chocolate chips, butter, and vanilla for the chocolate filling. Set aside.

In another bowl, cream the butter and sugar. Add eggs. Mix in flour, salt, soda, and oatmeal.

Butter a 9×13 in pan. Press down 2/3 of the cookie dough into the bottom of the pan.

Pour the chocolate filling over the cookie dough.

Sprinkle the remaining 1/3 dough on top of the chocolate filling.

Bake at 350 degrees for 20-25 minutes. Time may vary, but I just pull it out when I start to see a touch of golden on the dough.

Allow to cool if you don’t want a melted chocolate mess, unless you prefer that!

Consume to your hearts content.

Kind of cheesy, a lot of fun, but mostly just happy.
